Double-Chocolate Cream Roll

I know that we have just finished with Christmas, but that doesn't mean that we don't entertain for the rest of the year. So for all those calorie counters and W.W.'s out there, here is a low fat recipe for you all to try.


Double-Chocolate Cream Roll
Guests will never guess that this pretty refrigerated cake roll—with its creamy filling and drizzles of caramel and fudge—is low in fat! An update of an old recipe, this version replaces the original whipped cream filling with pudding and nondairy topping.

INGREDIENTS:
5 eggs, separated

1 teaspoon vanilla extract
1 cup plus
2 teaspoons confectioners' sugar, divided
3 tablespoons baking cocoa
1/8 teaspoon salt
1-1/2 cups cold fat-free milk
2 packages (3.3 ounces each) instant white chocolate pudding mix or 2 packages (3.4 ounces) instant vanilla pudding mix
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
3 tablespoons fat-free caramel ice cream topping, divided
1/2 cup chopped walnuts, divided
1 tablespoon fat-free hot fudge ice cream topping, warmed

DIRECTIONS:
Coat a 15-in. x 10-in. x 1-in baking pan with nonstick cooking spray; line with parchment paper, coated with nonstick cooking spray. Set aside. In a large mixing bowl, beat egg yolks on high speed until thick and lemon-colored. Beat in vanilla. Combine 1 cup confectioners' sugar, cocoa and salt; gradually add to egg yolks. In a small mixing bowl, beat egg whites until stiff peaks form. Fold into egg yolk mixture. Spread into prepared pan.


Bake at 350° for 14-16 minutes or until cake springs back when lightly touched. Immediately invert the cake onto a kitchen towel dusted with remaining confectioners' sugar. Gently but quickly peel off parchment paper. Roll up cake in the towel jelly-roll style, starting with a short side. Cool completely on a wire rack.

In a small mixing bowl, beat milk and pudding mix on low speed for 2 minutes. Fold in whipped topping. Set aside 1 cup. Unroll cake; spread remaining filling evenly over cake to within 1/2 in of edges. Drizzle with 2 tablespoons of caramel topping; sprinkle with 6 tablespoons of walnuts. Roll up again. Spread reserved filling over cake roll. Drizzle with hot fudge sauce and remaining caramel topping. Sprinkle with remaining walnuts. Cover and refrigerate for 1 hour before serving. Refrigerate leftovers. Yield: 12 servings.

8 g fat (3 g saturated fat)
89 mg cholesterol
301 mg sodium
33 g carbohydrate
1 g fiber
5 g protein

2 starch, 1-1/2 fat.

Howdy!

Just thought I'd drop a line real quick. I've not been well for the last 6 days or so. I had a real bad cold and it was trying to go into my chest, which thankfully has not happened thus far but I sure am sore from coughing. I guess that is one way to use your stomach muscles! LOL LOL

I've not seen anyone since last Wednesday when we had our post Christmas party. I didn't even get to go to church yesterday, which is very unusual. I've tried to do a few loads of laundry today, but every time I go outside (my washer and dryer are in the garage) I can feel it going straight into my chest. I literally dash out, throw the clothes wherever they need to be and dash back in so I'm not out there for very long.

What a mess! The last few day before school starts and I'm trapped in the house. HOW FUN! NOT!!!! This sounds awful, but for those of you who have been poorly you'll understand; I haven't even been dressed. I mean really whats the point? I'm not going anywhere or seeing anyone so what's the difference? I don't feel good so why take the time and effort to get dressed, right? RIGHT!!!!!!!!!!!!!!

Well, that was a quick update for now. I'll try to write more once I've gotten myself back together and feeling human. HA! HA!

Happy New Year!

It's hard to believe that another year has come and almost gone. I remember when we were all ringing in the new millenium and that seems just like yesterday, now we are heading into 2009.

As children of God we have such an accountability. So much responsibility. I know that there are things that I would change about 2008, as I'm sure most of you do. What we need to remember is that we DO NOT want to make the same mistakes twice. We don't want to have to 'lick that calf over again' as we would say in Georgia. We need to remember that we are to redeem the time according to Scripture, because the days are evil (Eph. 5:16) The more evil the day the harder the task and we need to be busy about the Father's business while there is still time. The Lord's work is different for each of us, but no less important than any other persons job.

We need to be more fervent in our Bible reading, Bible study, prayer and witnessing. These are not new year's resolutions, but areas that tend to sometimes get pushed aside a bit (especially during busy holiday seasons) and not coveted as the precious jewels that they are. If we are to endure as good soldiers, then we must have our armour on and be ready to do battle. Because just as assuredly as we know the Lord's return in nigh, so does the devil and we need to be ready to fight. We can not be ready if we have not read up, studied up, prayed up or emptied out (of self).

May each of us strive in 2009 to be more of what the Lord would have us be.

'Twas The Night Before Jesus Came

'Twas the night before Jesus came and all through the house

Not a creature was praying, not one in the house,

Weigh-In

Just a short note, being as how I've already blogged today.

I lost 2.5lbs. today. WOOOHOOOOO! That puts me back to where I started, at a 15 pound loss. Praise the Lord. This week should be fun, but I'm not going to worry about it too much. I want to enjoy the week and then I'll start renewed next week. I don't plan to go way overboard, but I do plan to have some of what I like and want. It is one week of about 2 in the whole year where it is expected to gain weight, right????? LOL
