Well, I've not blogged in a few days. I have been so busy trying to get everything ready to go. I have enough food in the freezer to last while I'm away. I'd hate for my children to starve. LOL!!
I packed my things today and it all fit into a carry-on. I have 2 large suitcases to take and fill up!! I have one inside the other. My dad always wants me to bring back chocolate. He LOVES cadbury's (it is made my nestle in the U.S. and tastes different) and Terry's chocolate orange (you may have found something like this at Cracker Barrel, but make by someone else). Then, I have some clothes for my nephew and some baby girl clothes from when Rebekah was little that my sisters friend wants for her neice. Anyway, that suitcase is full, but will be emptied out when I get there. Some of my family is sending things back, but there are also some things that I plan to bring back with me that we can't get here.
I plan to try and check my blog and kind of update on things as I go along, but we will see. I have no idea what all is being planned for me so I will have to see how things go. I know we are going to go to Dollywood and I plan on visiting the Discount Christian Book Store!!!!! YEEEAAHH!! I miss that something fierce here. We have no comparison what's so ever.

The Preacher is Never Good Enough!
If he is young, he lacks experience;
If his hair is gray, he's too old.
If he has five or six children, he has too many;
If he has none, he is setting a bad example.
If his wife sings in the choir, she is being forward;
If she doesn't, she isn't interested in the Church.
If he spends much time in the study, he's neglecting his people;
If he visits, he is a gadabout.
If he speaks from notes, he has canned sermons and is dry;
If he's extemporaneous, he is not deep.
If he is attentive to the poor, he is playing to the grandstand;
If to the wealthy, he is an aristocrat.
If he uses many illustrations, he neglects his Bible;
If not enough, he is not clear.
If he condemns wrong, he is cranky;
If he does not, he is a compromiser.
If he preaches an hour, he is windy;
If less, he is lazy.
If he preaches the Truth, he is offensive;
If not, he is a hypocrite.
If he fails to please everybody, he is hurting the Church;
If he pleases everybody, he has no convictions.
If he preaches tithing, he is a money-grabber;
If he does not, he is failing to develop his people.
If he receives a large salary, he is a mercenary;
If a small salary, it proves he's not worth much.
If he preaches all the time, the people get tired of hearing on man;
If he invites in guest preachers, he is shirking responsibility.
If he tries to enhance the church, he's blowing our savings;
If he never spends money, he has no vision.

Excuse me, are you Jesus?
A few years ago a group of salesmen went to a regional sales convention in Chicago . They had assured their wives that they would be home in plenty of time for Friday night's dinner. In their rush, with tickets and briefcases, one of these salesmen inadvertently kicked over a table which held a display of apples. Apples flew everywhere. Without stopping or looking back, they all managed to reach the plane in time for their nearly missed boarding.
ALL BUT ONE !!! He paused, took a deep breath, got in touch with his feelings, and experienced a twinge of compassion for the girl whose apple stand had been overturned.
He told his buddies to go on without him, waved good-bye, told one of them to call his wife when they arrived at their home destination and explain his taking a later flight. Then he returned to the terminal where the apples were all over the terminal floor.
He was glad he did.
The 16-year-old girl was totally blind! She was softly crying, tears running down her cheeks in frustration, and at the same time helplessly groping for her spilled produce as the crowd swirled about her, no one stopping and no one to care for her plight.
The salesman knelt on the floor with her, gathered up the apples, put them back on the table and helped organize her display. As he did this, he noticed that many of them had become battered and bruised; these he set aside in another basket. When he had finished, he pulled out his wallet and said to the girl, 'Here, please take this $40 for the damage we did. Are you okay?' She nodded through her tears. He continued on with, 'I hope we didn't spoil your day too badly.'
As the salesman started to walk away, the bewildered blind girl called out to him, 'Mister....' He paused and turned to look back into those blind eyes. She continued, 'Are you Jesus?'
He stopped in mid-stride, and he wondered. Then, slowly he made his way to catch the later flight with that question burning and bouncing about in his soul: 'Are you Jesus?' Do people mistake you for Jesus? That's our destiny, is it not? To be so much like Jesus that people cannot tell the difference as we live and interact with a world that is blind to His love, life and grace.
If we claim to know Him, we should live, walk and act as He would. Knowing Him is more than simply quoting Scripture and going to church. It's actually living the Word as life unfolds day to day.
You are the apple of His eye (Deut. 32:10 "He found him in a desert land, and in the waste howling wilderness; he led him about, he instructed him, he kept him as the apple of his eye.") even though we, too, have been bruised by a fall. He stopped what He was doing and picked you and me up on a hill called Calvary and paid in full for our damaged fruit.
Sometimes we just take things for granted, when we really need to be sharing what we know.
This made me stop and think. Maybe it will brighten your day!

Apricot Delight!
Here is another recipe for you. Enjoy!
Apricot Delight
Ingredients:
2 cans (5-1/2 ounces each) apricot nectar, divided
1 package (.3 ounces) sugar-free orange gelatin
1 package (1 ounce) sugar-free instant vanilla pudding mix
2/3 cup nonfat dry milk powder
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
1 loaf (5 ounces) angel food cake, cubed
1 can (15 ounces) reduced-sugar apricot halves, drained and sliced
Directions:
In a microwave-safe bowl, microwave 1 cup apricot nectar on high for 50-60 seconds or until hot. Sprinkle gelatin over hot nectar; stir until gelatin is completely dissolved, about 5 minutes. Set aside to cool.
In a large bowl, combine remaining apricot nectar and enough water to measure 1-1/4 cups; whisk in pudding mix and milk powder for 1-2 minutes. Let stand for 2 minutes or until soft-set. Whisk in cooled gelatin; fold in whipped topping and cake.
Pour into an 11-in. x 7-in. x 2-in. dish. Refrigerate for 2-4 hours. Garnish with apricot slices.
Yield: 8 servings.
Tasty Tip:
Typically you can find apricot nectar in the fruit juice aisle of your grocery store.

Been Busy!
I'm headed to the final countdown for me going to the States for 3 weeks. I have been busy making casseroles and food to put in the freezer so my hubby and 2 youngin's don't starve to death while I'm gone. I still have quite a few meals to prepare, but I am doing them in bulk so that they can have a variety and spread it out.
I've not had as much time to get on the computer and blog this past week, but I do have a few light dessert recipes that I thought I could post over the next few days. I figure as how some of us are on diets and trying to be good, that light would be encouraging. Then if your family is wanting something sweet you will be able to share also. The nutritional values are all here so those doing WW will be able to calculate how many points they are having. I really need to get me a WW points calculator when I go to the States because over here you don't add in the fibre like you do in the States so I know it makes a difference on the point value and when we do have some American things it would be nice to be able to work out the points.
Here is the first recipe:
Angel Food Cake Roll
1 package (16 ounces) angel food cake mix
5 teaspoons confectioners' sugar
1 carton (8 ounces) reduced-fat strawberry yogurt
1 package (1 ounce) instant sugar-free vanilla pudding mix
3 drops red food coloring, optional
2 cups reduced-fat whipped topping
Directions:
Line a 15-in. x 10-in. x 1-in. baking pan with waxed paper. Prepare cake according to package directions.
Pour batter into prepared pan. Bake at 350° for 15-20 minutes or until cake springs back when lightly touched. Cool for 5 minutes.
Turn cake onto a kitchen towel dusted with confectioners' sugar. Gently peel off waxed paper. Roll up jelly-roll style in the towel, starting with a short side. Cool on a wire rack.
In a large bowl, whisk the yogurt, pudding mix and food coloring if desired. Fold in whipped topping.
Unroll cake; spread filling evenly over cake to within 1/2 in. of edges. Roll up. Cover and freeze. Remove from freezer 30 minutes before slicing.
Yield: 10 servings

Finally getting it back together!
Proverbs 18 vs.9: "He that is slothful in his work is brother to him that is a great waster."
I don't know about you, but I've been having a hard time getting back into my rountine since the Christmas break. Yes, I know that was 2 1/2 months ago. What can I say?
I'm usually quite busy around the house. I like to keep it clean and tidy, not that most people don't, but just to give you an idea I'll share my schedule for most weeks:
Monday
>Bleach the upstairs bathrooms
>change the sheets on the beds
>dust/hoover
>general tidy up and put odds and ends away from the weekend
>gahter all the dirty clothes and take them to the garage (where our washer/dryer are at)
>Do 2 days of school w/ Caleb (we don't do school on Friday, that's our field trip/family day)
>bleach downstairs bathroom
>dust/hoover
>sweep/mop the kitchen
>start laundry and hopefully finish it LOL
Tuesday
>Make the bed (children do their own)
>wipe down the bathrooms
>start another load of laundry if it wasn't finished yesterday
>do school
>put laundry away & try to do the ironing?#
>hoover
>sweep/mop the kitchen
Wednesday - Saturday
Pretty much the same as Tuesday except I hope to have the laundry done by Wednesday.
Anyway, I do try to keep things up if I get behind it just seems to pile up really quickly. And this is not including all the extras like: Bible college class, Rebekah's piano and Brownies, Caleb's karate, church, youth meetings, my own devotion time, etc.
I guess you get the picture. Well, when we went into Christmas break I determined that that was what it was going to be. Once I had taken everything down and got the house back to normality I didn't do alot at all. Just kind of hung out. HA! HA! Boy have I been paying for it. I think I had a bad case of the lazies. I know you all are busy too and can probably relate. I just couldn't seem to get out of the rut.
I truly need the Lord's help with this. I did not want to be lazy (although I was doing most of what needed doing, there were some things that I was letting slide by). I knew that I would get to the point where it would get on my nerves, but I wanted that to come sooner rather than later. LOL I started to search in the Scriptures and ask the Lord to give me some motivation.
This verse in Proverbs 18 was a real blessing to me as were many others that I found along the way. I realized that not only was I in a rut, but that so called rut was just plain old sin. We all have our own weaknesses and flaws. Not only does the God who made us know about these, but so does Satan. He knows about them sometimes before we do, or rather before we realize them ourselves.
In 1 Peter 5 vs.8-11 it says, "Be sober, be vigilant; because your adversary the devil, as a roaring lion, walketh about, seeking whom he may devour: whom resist stedfast in the faith, knowing that the same afflictions are accomplished in your brethren that are in the world. But the God o all grace, who hath called us into his eternal glory by Christ Jesus, after that ye have suffered a while, make you perfect, stablish, strengthen, settle you. To him ble glory and dominion for ever and ever. Amen."
It might seem a little thing to most of you, but for me these last 2 1/2 months have been discouraging. It just seemed as though I was always behind, and any wife or mother out there knows that being behind can be frustrating in its own right; but to be in that positions just because you the the "I CAN'T BE BOTHERED" attitude. Have mercy! I knew that I was struggling with this and I know that the Lord understands that sometimes we get tired of going in circles, but this was getting ridiculous.
I thank the Lord for His Word. I'm glad that it is sharp and more powerful than any two edged sword. Sometimes I need that piercing of the heart to make it tender and open to the Lord's guidance in different areas of my life. He is always faithful to His children when we go to Him in need and truly desire His help and wisdom. And we must not forget that He cares, even about the little things.

"I AM"
My husband has started a Bible college for the people of our church that are able to come. I am taking the classes (along with all my other wife and motherly duties). I should say I want to audit the class (I DO NOT like tests! LOL), but my dear husband wants me to do it all the way. We'll see, it all depends on what the quizes and tests look like!!!! HA! HA! HA! HA!
Anyway, we are doing an overview in O.T survery. We summarized through the book of John today. It was very interesting and encouraging. What stuck out the most in my mind were the I AM's. I thought that I'd fill you all in on what the Lord blessed me with.
Exodus 3 vs.13-14: "And Moses said unto God, Behold, when I come unto the children of Israel, and shall say unto them, The God of your fathers hath sent me unto you; and they shall say to me, What is his name? what shall I say unto them? And God said unto Moses, I AM THAT I AM: and he said, Thus shalt thou say unto the children of Israel, I AM hath sent me unto you."
One of the greatest titles of God in the O.T is, "I AM." When Jesus came to earth He came as the great "I AM." He even referred to Himself as "I AM."

There is a twofold lesson in this: First of all, He took, blessed, and broke the Bread. It's saying that the Lord can only use those that are taken by Him, blessed by Him and broken by Him. Second, Only the Bread of Life can satisfy the hunger of the lost soul. AMEN!
Jesus told them that they followed Him because thier bellies were filled not because they really believed in the Son of God. I've seen a lot of people like that in churches. They are fine as long as God is pouring out the blessings, but as soon as He tries to help them grow they quit. They can not take the fact they have to face things: trials, tribulations and etc. in order to mature and grow . To be more like Christ Himself.
> I AM the Light - John 8 v.12: "Then spake Jesus again unto them, saying, I am the light of the world: he that followeth me shall not walk in darkness, but shall have the light of life."
Jesus displaces the darkness of men. When we accept Christ as our personal Saviour, darkness has to flee. The two can not co-exsist. It does not matter how dark this world gets as the old song goes, "There's not enough darkness to put out the Light!"
> I AM the Door - John 10 v.9: "I am the door: by me if any man enter in, he shall be saved, and shall go in and out, and find pasture."
Jesus makes it about as plain as can be that He alone is the way of salvation. He is the DOOR. If we want to spend eternity in Heaven we must go through the DOOR, Jesus. It is His way or no way.
> I AM the Good Shepherd - John 10 v.11: "I am the good shepherd; the good shepherd giveth his life for the sheep."
We see a great contrast between the old covenant and the new covenant. We see the difference between law and grace. In the O.T. the sheep gave their life for the Shepherd, but in the N.T., the Shepherd gave his life for the sheep. In the O.T. the shedding of the sheeps blood takes care of the Shepherd's sin for one year. In the N.T. the shedding of the Shepherd's blood washes the sheeps sin away for eternity! HALLELUJAH!!!!
> I AM the Resurrection - John 11 v. 25: "I am the resurrection and the life: he that believeth in me, though he were dead, yet shall he live."
I don't know about you, but it's good to know that Christ has taken the sting and victory out of death, hell and the grave. Because He lives, I will live also.
> I AM the Way - John 14 v.6: "Jesus saith unto him, I am the way . . . "
Jesus is not only the One that shows the way, He IS the way! AMEN! We need not look for any other way, Christ is it.
> I AM the Truth - John 14 v.6: " . . . [I am] the truth . . ."
In Jesus' earthly ministry He warned that "there shall arise false Christs . . . " (Matt. 24 v.24). The Lord was way ahead of the game. He knew what was coming. That may be one reason why He left us with this verse. To dispell and questions as to who was who, because there is NO falsehood in Christ. He is the personification of truth. HE IS THE TRUTH.
> I AM the Life - John 14 v.6: " . . . [I am] the life . . ."
Without Him we have (or had) no hope. He came and gave us life and with that life we now have a hope. He is the source of our life. He was sacrificed for our life. He's the secret to our life. Jesus is life itself. I may have one of Sis. Connie's fits here in a minute. WHOOHOO!!
> I AM the True Vine - John 15 v.1: "I am the true vine, and my Father is the husbandman."
Wonderful intimacy of a Christian with Christ is indicated here. He is the True Vine. We are branches of that Vine. We are part of Christ.
And if we have Christ, we have everything.
I know that this is all elementary, but I love how the Lord reminds us of who He is.

Consitutional Sunday!
Today, we finally constituted the church officially. What a blessing. This is what we have worked and prayed for for the last 3 years. God has indeed shined His face upon us.
Now we are praying for the Lord to raise up a British man to train and take the work. We know that that is all in good time and may not happen for some years yet, but that is what it's all about.
When I sit back and see how far some of our people have come in the last year even, it amazes me. I feel so unworthy to be in this place and position. That God would see fit to use us in this way is humbling. There is an evangelist out of our home church in Georgia named Stinnet Ballew, and when he prays he thanks God for calling him into HIS ministry. That has stuck with me all these years. Just knowing and realizing that it is HIS ministry not ours. That He thought us usable in HIS ministry and how special that is.
I just want to 'Thank' the Lord for His goodness and His mercy. I praise His name for He is worthy to be praised.
"Thou art worthy, O Lord to receive glory and honour and power: for thou hast created all things, and for thy pleasure they are and were created." Revelation 4:11
